Basil Mashed Potatoes Recipe
1 medium red potato, washed and cut into quarters
2-4 tablespoons fat-free sour cream
1/2 teaspoon dried basil
Salt and pepper, to taste
Steam or microwave potato until tender. Mash well with fork, adding sour cream to desired consistency. Add basil and season with salt and pepper.
